I have purchased the Stripe payment gateway, but when i went to preview a post with the booking form enabled, no stripe gateway shows up…does post need to be published?

Do you mean event rather than post?
The payment gateway needs to be enabled (either set to live or sandbox) and appropriate credentials entered in Setting s > Event Organizer > Bookings
Then, assuming your event has non-free tickets and you have selected at least one, the fields should appear.
If not you may have a JavaScript error on the page. Can you provide a link to it?
